Singing hinny
Singing hinny, also called Singin’ hinny or fatty cutty, is a sweet bread from England, especially Northumberland and the coal-mining areas in the North East. In Scotland it’s known as fatty cutties. Hinny is a friendly Newcastle-area term for women and children. The “singing” comes from the sizzling sound of the fat (lard or butter) as the dough cooks on a hot plate or griddle.
Ingredients typically include flour, baking powder, lard or butter, currants, milk or buttermilk, and a little salt and/or sugar. The dough is rich in fat, rolled into a round flat cake, and cooked on a flat griddle or skillet. It’s usually one large cake, but you can make several smaller ones.
