Clochette is a bell-shaped goat cheese from the Nouvelle-Aquitaine region of France, made by Chèvréchard from pasteurized goat milk. It is mold-ripened and aged about two weeks (fresh-ripened about 2–3 weeks). The cheese has a wrinkled, edible white rind and a firm, dense, velvety texture. Its flavor is well balanced, tangy, and goaty. Production is mainly in spring and summer (March through fall), and it has a shelf life of about 45 days. A typical wheel weighs around 9 oz (260 g) and measures about 8–9 cm in diameter with a height of about 9 cm.
