Cervelle de canut is a cheese spread from Lyon, France. It uses fromage blanc (a soft white cheese) mixed with chopped herbs, shallots, salt, pepper, olive oil, and a little vinegar. The name means “silk worker’s brain,” referring to Lyon’s 19th-century silk workers, the canuts.
