Bleu d'Élizabeth is a semi-firm blue cheese from Sainte-Élizabeth-de-Warwick, Quebec, Canada. It is made from thermized, organic cow’s milk from the Louis d’Or farm and processed at Fromagerie du Presbytère. The cheese has blue veins from Penicillium roqueforti and an ocher-spotted rind. It smells creamy and buttery and has a mellow flavor. A wheel weighs about 1,200 grams and the fat content is 28%. It is aged for about 60 days. The process is inspired by French blues like Fourme d’Ambert and Bleu d’Auvergne.
