Pedro Subijana
Pedro Subijana Reza, born on 5 November 1948 in San Sebastián, Spain, is a renowned Spanish chef who runs the Akelarre restaurant in San Sebastián. In 2006, Akelarre earned its third Michelin star.
He studied at Madrid’s Casa de Campo Hospitality School and at the Luis Irizar Cooking School in Zarautz, where he later taught. After early work in Tolosa, Hernani, Madrid, and Estella, he joined Akelare as a cook and became head chef in 1975. He gained recognition in major gastronomic guides and joined Relais & Châteaux and Les Grandes Tables du Monde.
Subijana believes nutrition should be taught in schools. As a teacher, he has given lectures across Europe, the Americas, and in Spain. He helped promote New Basque Cuisine (1976–1978) and co-founded Euro-Toques in 1986 with Juan Mari Arzak and other European chefs. He served as General Commissioner for Spain, International President, and Spanish President of Euro-Toques until April 2018.
He supports the Basque Culinary Center in San Sebastián and is an associate teacher at the University of Navarre. In 1992, he started the TV show La cocina de Pedro Subijana (Pedro Subijana’s Kitchen) on Euskal Telebista, which has aired more than 1,400 episodes.
