Margaret Chabot (1752–1819) was an American hotel owner who founded the Rising Sun Hotel on Conti Street in New Orleans’ French Quarter. An Irish immigrant, she married Claude Chabot in 1783 and, after becoming a widow in 1791, bought a building in 1796 to open the hotel. The hotel drew foreign travelers and wealthy guests; Francis Baily described it in 1797, and explorer William Clark stayed there in 1798. It was known for luxury, a garden, and music. Chabot retired in 1809, passing the business to her daughter Celeste; the hotel was then called the Rising Sun Hotel. It burned down in 1822.
