Jean Veillot (died before 1662) was a French composer and priest. In 1640 he became maître de chapelle at Notre-Dame de Paris, taking over from Henry Frémart. In 1643 he was appointed sous-maître of the Chapelle royale, succeeding François Cosset. After Eustache Picot died in 1651, Veillot shared duties with Thomas Gobert. He wrote three motets for double choir.
