Biko (restaurant)
Biko was a Basque restaurant in Mexico City that focused on experimental molecular gastronomy. It opened in 2008 and was located at Presidente Masaryk 407 in the Polanco district. The owners were Bruno Oteiza and Mikel Alonso, with Alonso as head chef and Gerard Bellver in the kitchen. The menu featured techno-emotional cuisine, with dishes like burnt corn soup, foie gras with cotton candy, foamed cauliflower, and almond-infused pork cheeks. The dining room, designed by Entasis Architects, used light and dark materials to echo Basque duality. Biko closed on December 23, 2017. It received praise from critics: Time Out gave it five stars in 2012; Eater ranked it 43rd in The World’s 50 Best Restaurants in 2016; and The Daily Telegraph named it one of Mexico’s top five restaurants in 2016.
