Sorol is a Filipino dish from Camiguin. It features chicken simmered in a coconut milk broth with ginger, Mexican oregano (kalabo), labuyo chili, onions, and tomatoes. It’s a type of ginataan. The dish can also be made with pork, beef, or seafood. Because Mexican oregano can be hard to find, cooks often substitute lemongrass, other oregano varieties, or sage.
