Ocopa
Ocopa is a smooth Peruvian sauce from Arequipa. It blends sun-dried yellow chiles (mirasol) with sautéed onions and garlic, crackers, roasted peanuts, evaporated milk, and fresh cheese, plus huacatay (black mint). The mixture is ground into a slightly pasty sauce with a pale color and a rich flavor, finished with salt and oil. It can be served hot as a dressing for boiled potatoes or as a garnish for cold hard-boiled eggs. In Arequipa it is usually served with boiled potatoes or shrimp and decorated with a hard-boiled egg and a botija olive.
