Lindores Abbey distillery
Lindores Abbey distillery is a Scotch whisky maker in Newburgh, Fife, Scotland, just opposite the Lindores Abbey. It is owned by the McKenzie Smith family, with Drew McKenzie Smith as Custodian of Lindores. The distillery began distilling in December 2017 using three Forsyths stills (one wash and two spirit stills) and has a capacity of about 260,000 litres per year.
The plan was to produce 150,000 litres of spirit annually. Scotch whisky must be aged in oak for at least three years, and Lindores aimed for five-year aging, so no whisky was sold before 2021. Until then, the distillery sold aqua vitae.
The distillery sits on Lindores Abbey Farm, which the family bought in 1913. They set up a Preservation Society to protect the Abbey for future generations.
Barley is grown in Fife; since 2019 the Concerto variety has been grown on two farms next to the abbey, with a goal of using only locally grown Lindores barley. In 2021, Lindores Abbey released its first single-malt whisky: Lindores Single-Malt Scotch Whisky MCDXCIV.
