Knoephla
Knoephla (also spelled knephla) is a type of potato dumpling used in soups in the United States. The name comes from the German dialect Knöpfle, meaning "little knob." Traditional knoephla soup is a thick chicken and potato soup, almost a stew. It is especially common in Minnesota, South Dakota, and North Dakota, where many German immigrants from the Russian Empire settled. There are several variations, with North Dakota versions often featuring just potatoes and dumplings.
