Kirschner value
Kirschner value (Kirschner number) is a fat test that shows how much volatile fatty acid can be obtained from fat. Five grams of fat are processed to release and distill the volatile fatty acids, which are then turned into water-soluble silver salts. The Kirschner value is the number of milliliters of 0.1 N sodium hydroxide needed to neutralize those salts. Reichert value and Polenske value are related tests that use a similar method.
