Ellington Township is a rural area in Adams County, Illinois. It is one of 22 townships in the county and covers about 34.3 square miles, almost all of it land. The southwest corner is now part of Quincy Township. The elevation is about 720 feet.

As of 2020, 2,820 people lived there in 997 households and 866 families, with 1,140 housing units. The population density is about 82 people per square mile.

Racial makeup is predominantly White (about 94%), with small numbers of African American, Native American, Asian, other races, and people from two or more races. Hispanic or Latino residents are about 1.7%.

Households: 34.2% had children under 18; 75.4% were married couples; 7.6% had a female householder with no husband present; 13.1% were non-families. The average household size was 2.76 and the average family size was 2.98.

Age: median age was 45.0 years. About 25.3% were under 18, and 21.4% were 65 or older.

Income: median household income was $80,393; median family income was $88,452. Males earned about $50,849, females about $38,902. The per capita income was $36,961. About 2.1% of the population lived in poverty.
