Diplomat pudding
Diplomat pudding, also called Diplomate au Bavarois, is a cold French dessert made in a mold. There are two common methods:
- Classic method: ladyfingers soaked in rum or kirsch syrup, layered with candied fruit, apricot jam, and an egg custard or Bavarian cream. Chill, unmold, and serve with fruit sauce or custard on top.
- Brioche method: replace the ladyfingers with stale brioche soaked in milk, and cook the pudding in a bain-marie (water bath) before refrigerating.
