D'Elidas
D’Elidas is a Panama-made hot sauce brand from Productos D’Elidas S.A. The original yellow sauce, Picante Chombo, blends Aji Chombo (Panamanian habanero), mustard and vinegar. The recipe dates back to 1904 among Antillean-Panamanian communities and was later popularized by Elida Valdivieso. In April 2002, Panamanian entrepreneurs acquired the brand and formed D’Elidas S.A., starting exports to the United States. Today D’Elidas ships to the U.S. (New York, North Carolina, Florida, Missouri, Washington, and California), Canada, Costa Rica, El Salvador, India, and Sweden. The line now includes Red and Green sauces, both made with habanero and vinegar (no mustard). There is also a Chinese-style sweet and sour sauce based on Aji Chombo. The yellow Picante Chombo was featured in Meagan Taylor’s music video “Rojo Caliente.” The yellow sauce measures 2,500–5,000 SHU, while habanero peppers typically range from about 150,000 to 325,000 SHU.
