Bulk cocoa
Bulk cocoa is a broad category of cocoa beans, different from flavor cocoa. It mostly comes from West Africa and is usually from Forastero cacao trees. Bulk beans often have strong, less refined flavors and are used to make blends that keep a consistent chocolate taste. Quality rules help manufacturers keep batches uniform so brands can maintain their flavors.
By 2017, more than 95% of world cocoa production was bulk, with West Africa the main source. Ghana is known for high‑quality bulk beans; Cadbury’s reputation has come from beans grown in Ghana, which is supported by the Ghana Cocoa Board to keep a stable, recognizable chocolate flavor in European and American markets. Indonesia also produces bulk cocoa, but its quality varies, and much of it is unfermented and used as bulk filler. Bulk beans are traded as a commodity, with different bulk grades used in futures trading.
