Aguachile
Aguachile is a Mexican dish from the coast of Sinaloa. It features raw shrimp or fish marinated in a lime juice sauce with chiltepín peppers, salt, and slices of cucumber and red onion. It’s usually prepared in a molcajete and eaten fresh and spicy. The dish originated in Sinaloa and was first made with hot water and chiltepines.
