Toshiro Konishi
Toshiro Konishi (July 11, 1953 – April 16, 2016) was a Japanese-Peruvian chef, musician, and TV personality who helped popularize Japanese and Peruvian fusion cuisine in Peru. He opened one of Lima’s first Japanese restaurants in 1977 and later ran Matsuei, a Lima restaurant he worked on with Nobu Matsuhisa. He also opened Toshiro's and Wako in Lima’s Sheraton hotel. Konishi was known for blending Japanese and Peruvian flavors and took part in many international food festivals. He taught at Universidad San Ignacio de Loyola in Lima. In 2013 he opened Mesa 18 at the Miraflores Hotel, and in 2015 he started Oishii, his most recent restaurant. In 2008 the Japanese Ministry of Agriculture, Forestry and Fisheries awarded him the Minister’s Prize, making him the first Japanese chef based in Latin America to receive it. He died of cancer on April 16, 2016, at age 63. His wife and daughter later continued the Toshiro brand.
