Champagne Louis Nicaise
Champagne Louis Nicaise is a small Champagne house in Hautvillers, a renowned Premier Cru village famous for Dom Pérignon. The estate grows Chardonnay, Pinot Noir, and Pinot Meunier, and produces about 6,000 cases a year. It is run by a married couple, Laure Nicaise-Préaux and Clement Préaux. Laure is the fourth generation of her family to make Champagne there, and Clement trained under the expert winemaker Anselme Selosse. They have introduced changes such as lowering the dosage in their wines and pursuing sustainability certification.
