Born on May 1, 1996, in Vail, Arizona, Jackson bats and throws right-handed. He went to Cienega High School in Vail and was drafted by the Texas Rangers in 2014 (32nd round) but chose not to sign. He then attended the University of Utah, where he played for the Utah Utes. In 2015 he played as an outfielder, hitting .179 in 44 games. In 2016, as a sophomore, he hit .299 with 20 RBIs in 34 games, but also pitched in relief and later had Tommy John surgery, missing 2017.
The Los Angeles Dodgers drafted Jackson in the 12th round of the 2017 MLB draft as a pitcher. He began his pro career in 2018 in the minor leagues, splitting time between the Arizona League Dodgers and the Great Lakes Loons. He played for Great Lakes again in 2019 and moved up to the Rancho Cucamonga Quakes. The 2020 minor league season was canceled due to the pandemic. After the 2020 season, the Dodgers added him to their 40-man roster.
Jackson started 2021 with the Tulsa Drillers (Double-A) and was selected for the All-Star Futures Game in June. He earned a promotion to the Triple-A Oklahoma City Dodgers later that July, and made his MLB debut on August 16, 2021, against the Pittsburgh Pirates. He threw four scoreless innings in relief and struck out five. In 2021 he appeared in a few MLB games and posted a 2.31 ERA in 11+1/3 innings.
In 2022, Jackson spent most of the season in Triple-A but pitched in four MLB games as a reliever. In 2023, he appeared seven times for the Dodgers in the majors and spent time with Oklahoma City with a higher ERA. On June 20, 2023, he was designated for assignment and traded to the Pirates on June 25 for cash considerations. With the Pirates, he made 12 appearances with a 4.33 ERA and 41 strikeouts in 43+2/3 innings. He was designated for assignment again in December 2023 and released.
In January 2024, Jackson signed with the Yokohama DeNA BayStars of NPB. In 2024, he went 8–7 with a 2.90 ERA and 121 strikeouts, and he started Game 1 of the 2024 Japan Series. In 2025, he appeared in 25 games for Yokohama, going 10–7 with a 2.33 ERA and 109 strikeouts in 150+2/3 innings. On December 2, 2025, he and the BayStars parted ways, and he signed with the Chiba Lotte Marines on December 17, 2025.
His brother Isaiah Jackson is also a professional baseball player.
