Åland pancake
Åland pancake is an oven-baked pancake from the Åland Islands. It’s usually made with semolina, eggs, sugar, salt and cardamom; some versions use rice instead of semolina. The batter is baked and can be eaten warm or cold, and it’s commonly served with prune jam (sviskonkräm) and whipped cream (snömos). The dish likely began as a practical way to use leftover porridge, but details are mainly from local tradition. It’s related to the Gotland pancake, which uses rice and saffron. On Åland’s Autonomy Day (June 9), it’s often served at celebrations in Mariehamn. It can be enjoyed as a dessert or a sweet snack.
