Shahi paneer, also known as paneer rajwadi or chhena rajwadi, is a creamy curry from the Indian subcontinent made with paneer. The sauce is made by blending tomatoes, onions, ground cashews, cream, ghee, and spices into a smooth, rich gravy, then simmering with cubes of paneer. It’s similar to paneer butter masala and kadai paneer. A key difference is that paneer butter masala uses more whole spices and is less sweet than shahi paneer, which is generally sweeter.
