Potassium ascorbate

Potassium ascorbate is the potassium salt of vitamin C (ascorbic acid). It’s also known as monopotassium ascorbate or potassium L-ascorbate. Its chemical formula is KC6H7O6 and it is a mineral version of vitamin C.

In foods, it acts as an antioxidant and has the E number E303 (INS 303). Its regulatory status varies by country: it is not permitted as a food additive in the United Kingdom, the United States, or the European Union, but it is approved for use in Australia and New Zealand.

- Very soluble in water: about 98 g per 100 mL at 25°C

Some studies have reported strong antioxidant activity and potential anti-tumor effects.
