Pampanga longganisa is a Filipino pork sausage from Pampanga. It’s a sweet, hamonado-style sausage that’s usually longer and thinner than other sausages. It’s made with pork, garlic, brown sugar, black pepper, coarse salt, and vinegar. It can be made with or without casing and is often dyed orange or red with achuete seeds. It’s the most common sweet-type longganisa in the Philippines because it’s mass-produced.
