Onion cake
Onion cake is a savory or sweet cake made mainly with onion. It’s made in many countries and comes in several forms. Common varieties include:
- Laobing: a Chinese flatbread or pancake made from flour, water and salt, sometimes with scallions.
- Scallion pancake: a Chinese-style pancake or flatbread that uses scallions as a primary ingredient.
- Pajeon: a Korean savory pancake batter with flour, eggs and green onions; sometimes with seafood or meat.
- Edmonton-style green onion cake: a Canadian version, usually round or with a hole in the middle.
- Teisen nionod: a Welsh onion cake with onion, potato, butter, beef stock, salt and pepper.
- Zwiebelkuchen: a German onion cake or tart with onions, bacon, cream and caraway on yeast dough.
Other notes: Onions can be boiled to mellow their flavor. Potatoes or bacon may be used as main ingredients, and cottage cheese or sour cream can be added. In Chinese cooking, fresh scallions are often used in onion cakes.
