Lobster roll
Lobster roll is a North American sandwich with lobster meat served on a grilled hot-dog–style bun. The filling usually includes lobster, butter, lemon juice, salt, and pepper. In some New England areas, mayonnaise is used instead of butter, and some recipes add diced celery or scallions. Typical sides are potato chips or French fries.
Origin is debated. Many say Perry’s in Milford, Connecticut created it in the late 1920s, while others credit fishermen from England and Portugal. By the 1970s, chopped lobster in drawn butter on a bun appeared at roadside stands in Maine. In Maine, lobster rolls are usually served cold with mayo, while the hot, buttered version is called Connecticut style.
Lobster rolls are popular in Maine and other New England states and on Eastern Long Island. They also appear as a seasonal item at times in Canada and New England.
