Bread sauce

Bread sauce is a traditional British sauce served with roast chicken or turkey. It is warmed milk thickened with bread crumbs and butter, then seasoned with onion, nutmeg, clove, bay leaf, black pepper and salt. Sometimes the roasting fat is added for extra flavor. Slightly stale bread is commonly used. The sauce dates back to medieval times, when cooks used bread to thicken sauces as a way to use up leftovers. It remains a classic accompaniment to domestic fowl.
