Goombay Smash
Goombay Smash is a Bahamian rum drink. It’s usually served in a sling or Collins glass. It was created by Emily Cooper, known as Miss Emily, at the Blue Bee Bar in New Plymouth. The original recipe is a secret, but it’s believed to include coconut rum, dark or spiced rum (often called dirty rum), apricot brandy, and pineapple juice. Many versions use similar ingredients—rum with coconut and pineapple juice. Apricot liqueur is sometimes used, and dark or spiced rums are common. If you can’t find coconut rum, coconut cream can be used. Some variations add Creme de Banane (banana liqueur), orange juice, and grenadine.
